My baker friend, a former Head Baker at Per Se and Bouchon Bakery recommended it to me for the few days I spent working with him and I would say it was the best assigned reading I’ve had in a long time.

I didn’t actually read every word of this book, but I gleaned what I wanted to from it, which is to say that I read the first chapter in it’s entirety and read more than I ever want to know about The Bread Process, from Mixing through Baking.

Hamelman treats you seriously, assumes you have a brain and can work out that things can be varied. Until recently, it was primarily circumstance and resources that determined why and how we made things. He is steady and studied.

A year later, I have added this book to my shelf. If you want to learn to make artisan style breads give ejffrey a try. I still would not recommend this book to a new baker, but it is an excellent resource for a seasoned baker. The warm, complex aroma of a fresh-baked loaf of bread can be utterly tantalizing; the first bite, a revelation. A complete chapter on decorative breads–withinstructions on techniques as well as a wide variety of exquisitepatterns–will inspire magnificent display creations.
Here and there Hamelman makes a nod to the home baker, but it doesn’t take long for the amateur baker to realize that Hamelman is not all that interested in his or her plight.

I admit, this wide-angle on bread feels verywhen the intersection of dialogues is practically a conversational requirement. The breads I’ve made from this book, though, have not turned out well.
