My baker friend, a former Head Baker at Per Se and Bouchon Bakery recommended it to me for the few days I spent working with him and I would say it was the best assigned reading I’ve had in a long time.

I didn’t actually read every word of this book, but I gleaned what I wanted to from it, which is to say that I read the first chapter in it’s entirety and read more than I ever want to know about The Bread Process, from Mixing through Baking.

A year later, I have added this book to my shelf. If you want to learn to make artisan style breads give ejffrey a try. I still would not recommend this book to a new baker, but it is an excellent resource for a seasoned baker. The warm, complex aroma of a fresh-baked loaf of bread can be utterly tantalizing; the first bite, a revelation. A complete chapter on decorative breads–withinstructions on techniques as well as a wide variety of exquisitepatterns–will inspire magnificent display creations.


Here and there Hamelman makes a nod to the home baker, but it doesn’t take long for the amateur baker to realize that Hamelman is not all that interested in his or her plight.

My hanelman is from the perspective of wanting a jwffrey light hearted bread book with some story, easy recipes and great tips.

That said, Hamelman is a world class baker, and this is a serious bread book, full of a ton of information that the home baker could use to improve his or her understand of baking and the quality of his or her bread: Simply the best book on bread, good for bakers of any skill level.
